Now flavored popcorn is the new star of the salons, it has countless incarnations, limited only our imagination. New producers jump on the market in increasing numbers, like hot corn grain, offering flavors such as: sweet Chiptole chili, fruit chutney and Cheddar, macchiato, and whiskey or goat cheese and black pepper, highlighting the high content fiber and antioxidants.

Just like cafe shops, cupkejki, frozen yogurt, and most pop trends, this too, wandered from America and will soon spread to Europe.

Chinese power

In my previous life, for the conference zakoszarowani our department, we were (literally) in the old military unit at Kazuń near Warsaw. One whole day was devoted to maneuvering the block. We got jobs, maps and dressed in yellow shirts, we were driven to the military old to the point of zero. These were the parochialism of some nearby villages, but one can easily call it wildness. From there we had to go a considerable distance through the fields to przeprawić boat to the other side of the water (do not remember a river or lake). Slightly confused, hungry and uncertain of the chosen path among fields stretching to the horizon itself (without the slightest trace of the water), we met an elderly gentleman, who appeared like a ghost on the road. He stopped, looked at our dirty dozen, and light while mędrcostwem doubt in his voice he said: And old people say that once flooded the yellow race world and went on ...

It took a little more than a decade, and please, China has become an economic power, and flood the world with your low-cost production, but because it is not a political blog, I'm coming to eat. The most famous in the West, Chinese New Year celebration is, who has recently begun. Apparently even bigger celebration (for some Chinese) is Dong Zhi feast that is the Winter Solstice , also known as Tang Check that is, the advent of winter, which is celebrated by preparing rice balls Tang Yuan. I know I'm late already two months, but it do not matter, because I like most is that the balls represent the community and the completeness of the family and that's important no matter what time of year.

It is quite an exotic and "dessert" for our palates, but worth trying. I've included a provision in the basic version, but you can modify the filling, peanut, sesame and bean (!) ...

Tang Yuan-rice balls in syrup
(4-6 servings)

Weight: 250g

rice flour 1 tablespoon sugar
180ml water
3-4 colors food colors

Syrup:
50g sugar cane
350ml water
2 thin slices ginger
2 mint leaves (optional)

In a bowl mix the flour and sugar and then pour water and Mix until a dough that will not lepiło the hands. Divide into 3-4 parts, each add a few drops of dye, stir thoroughly. With each fill / color shape into small balls and put on a plate, cover and chill in refrigerator for several hours or overnight.

To prepare syrup, boil some water, toss the remaining ingredients and boil again. Reduce the heat and cook for 10-15 minutes.

Before serving, boil water in a pot, throw balls, when they will leave the surface, remove them with a slotted spoon and add to warmed syrup. Enjoy!

* Original rules provide pandan leaves. I zaeksperymentowałem with mint, I think successfully.

The Myth Characters Name

Chicken with lemon, garlic and Moroccan spices

my Moroccan colleague półetatowy have 40 or 48 years, he did not know exactly. He was born somewhere in barberskiej sediment, in the Atlas Mountains and the young adult years were spent in Marrakesh. From what he says is officially the year of birth given on the first January of the year accidental. Documents show that at 48 years and the appearance of the 1940-1942 ... most of his professional life has passed him to work in kitchens in Italy and England, but unfortunately it did not have much of an impression on him and effect. It is still better at peeling and cutting vegetables than cooking. Any conversation about Moroccan food ends with the sentence My wife does it sometimes, I ask if you want .

Once there was a good reveler which confirms his knowledge of Italian beers and regular sighs to Campari, but when the family found him a wife, everything changed. Wybranki family donated the traditional lamb and other meats, arranged a feast, to which they invited family and neighbors and played for three days (of course Lord of the ladies and gentlemen of Lords).

Today's recipe comes from a book by Jason Atherton "Maze" and the provisions of the wife of my friend got the time comes;)

Next, add the breasts and, if necessary, add some hot water, continue cooking for 15 minutes. Remove from the heat and leave the meat in the broth until przestygnie.

Preheat oven to 200 º C. Remove the chicken, lemon and garlic with a slotted spoon and dry paper. Harissa Spread evenly over the chicken pieces and sprinkle with seasoning ras el hanout and a pinch of salt and pepper.
Heat olive oil and butter over medium heat in large skillet (or other ovenproof dish), add cinnamon, thyme, lemon quarters 5-6 and half of garlic. How Coaker with Purnell

As you know, I have no idols. I have the designs, which try to draw what is in my opinion the best and are often not known and recognized authorities. Michael Coaker * chef / guardian of my group in college, he told us at the first meeting: do not take everything we say to you as ultimate truth. In fact, we want you to show us how you are doing, then the time to learn something . It reassured me that this time the studios have chosen well;) Cooking is a very personal area and you should not try to hammer it into the framework of a good-bad, do so-and wrong. Of course, the basics are important, because as said by Alexander McQueen need to know the rules to break them , but then ... we are only limited imagination and good taste;)

In the kitchen / cooking still learn something, whether it improved their own ways and observing others. The most important to have an open mind and try, taste, try, taste. Chef, you will be happy podpatrujemy rather I listen every shred of information about his cooking is Glynn Purnell. The guy who skillfully uses the multicultural traditions of Birmingham, creating its own courageous and inspiring style. He is not afraid to use exotic spices, flavors and modern cooking techniques and yet his dishes are not przekombinowane and przeintelektualizowane, and no trains boxing, as it is not to like? ;)

My present dish is a nod to both chefów. No revolution, just a delicious combination of flavors.

mackerel salad with chicory, and stewed with red orange
(2 servings)

4 mackerel fillets
a chicory
3 red oranges
2 slices ginger (2-3 mm each)
½ teaspoon of honey
2-3
carrots 1 celery stalk (chopped in slices)
1 tablespoon toasted pine nuts
Oil for frying (about 2 tablespoons)
20g butter (optional)

sea salt Freshly ground pepper

Peel chicory from damaged leaves and cut in half lengthwise. Squeeze the juice of two oranges and a third peel and divide into segments. In niewysokim pot lid which you warm up some oil and place cut side chicory halves to bottom. Fry for a minute and pour over orange juice, add ginger slices, cover and simmer, cook for 8-10 minutes. Chicory should be soft but still retain their shape. Remove and pat dry. Keep in a warm place. Of the cooking liquid to add honey.

Meanwhile, peel carrots and cut the peeler into long slices, put into a bowl and pour boiling water for 30 seconds (an option that will help complete the salad, but you can leave the crude), Cast a and dry. Put into a bowl, add celery, orange segments and pour the boiling brew. Sprinkle with pine nuts.

Popieprz Posól and fish. Heat enough oil to cover a very thin layer of the bottom of the pan. Lay fillets skin down and push them for a few seconds with a spatula if they start to collapse. Fry for 2 minutes, then flip and cook another 2 minutes, add butter and remove from heat. Let stand for 2 minutes.

Arrange on plates chicory, fillets of mackerel and carrot and orange salad. Ideal for a light lunch.

Letter Which Ask For A Service

Unconventional

passion, creativity, ego, or nonsense hypertrophy, such opinions can be heard on the kitchen cooks the experiments. Each of these statements is true and I hope it never comes close to the last two and especially the hypertrophy of the ego, which, among cooks is a common complaint as well as varicose veins and back pain. Nonsense is the notion of subjective and ephemeral, it can give meaning they integrate in the appropriate configuration of the time, place, and the recipient, not to mention at the same instant delight a wide audience. You have to reconcile with the fact that people are comfortable and accepted conventions of the mind, unfortunately, become lazy. Because the customer is just as important as the creator, you can use the fact that cooking is (can be) an art rather than a purely utilitarian area for what is often taken, and as such, should be compelled to think and broaden our horizons.

Who gets the first dance a crate of oranges! - gave Woyczool when didżejowaliśmy together in a big rock club in Hawaii. Rozgrzewaliśmy audience for the show coming out on the wider water Ego Tri-band (do not put out, maybe surpassed their egos? Kidding, they were cool people.) Unfortunately, despite the fact that nearly everyone rocked up at the table and rhythmically stamped his foot, there was first a willing ... for it after the concert, at the bar, alone got praise for a cool event and translations that are here are not dancing, because dance is a discotheque . For me it does not make sense! Because almost identical set before Maleo Reggae Rockers rocked the people in Olsztyn almost immediately ...

Returning to cooking. I always believed that as beets parsnip has a natural predisposition dessert. Dishes are seasoned adds character to its sweetness and therefore I often use it as an accompaniment to duck or pheasant (and other game). But I wanted to go further and exploit its potential to the maximum, hence the idea for a mousse with pear jelly and today's cheesecake with cardamom. I'm trying to free him from playing a supporting role, and given the nature of stars it deserves. You just need to give him a chance and looked at from another perspective ...

Pasternakowy cheesecake with cardamom
(sheets of 20cm and a depth of 4cm)

3 medium eggs (yolks separated from the protein)
small pinch of salt
100g sugar
50g corn flour
½ teaspoon baking powder
¼ teaspoon ground cardamom pods
200g parsnip puree
100g fat cottage cheese (finely shredded)
25g soft butter

Base
biscuits 100g
25g butter, melted

Smash biscuit roller to cake, pour the butter, mix and lay off the bottom of the sheet. Put in the fridge for half an hour.

Beat whites with a pinch of salt to stiff peaks.

In a bowl, blend egg yolks with sugar until pale and the color will be fluffy. Put the flour, baking powder and cardamom, stir thoroughly, add the puree, cheese and butter, mix again for a uniform mass. Pour into a bowl with whipped foam and with a wooden spoon or silicone combine the two masses. Pour into prepared pan and bake for 30-40 minutes in a preheated oven at 200 º C. Remove and after a slight przestudzeniu split into pieces. Then taste the best:)

Crispy tofu cheesecake, a Year Zajac

Chinatown, London. Friday or Saturday night a few years ago. One of the restaurants on Gerrard Street, the dragon in the name. In a small bar / kitchen area at the entrance of a man in a suit (except head) chopped a big cleaver crispy duck shouting something to the waiter standing by, but I do not quarrel. At the bottom there were no seats, we were directed to the first floor. We went there very schodzonymi stairs and got a round table in the corner. a moment the waiter comes to you - said allocators tables. A few moments later, we hear: G otowi? Ready? - chwiii yet ... You will be asked - no problem! - stopped completely indifferent waiter fluffy. He leaned against the wall, standing on one leg and a second podkurczając. His white shirt artistically here and there, sticking out of trousers, yawned, and seemed for a moment przysnął ... Already? Ready? Ready? - repeated after a minute. We prepared a number of dishes and burst out laughing.

for his pose at the wall and the inexpressible words, indifference was the favorite of our group on najluźniejszego waiter I've ever met. Often we go back to him in talks about customer service;)

for We do not go back to Chinatown, no, unless as a last resort ... the best restaurants are elsewhere:) Who's there was probably noticed the same thing, drive, rushing and all other methods to shorten the stay in the restaurant are allowed, especially late in the Friday-Saturday evening. The customer has to come, eat, pay and leave. Must derive satisfaction only from the food and companionship to which he came. I'm not complaining, it's even fun, such charm of this place.
